Home Sweet Home

Everything is in disarray, we've realized we shouldn't have thrown away so many things when we moved into the last rental (our house is very bare now), but we are HOME!!

This is such a wonderful house. I'm excited to think about the future - Christmastime, a dog, and kids. :) :)

Home Sweet Home in 11 days...

...and those 11 days can't come faster.

Jeff and I are almost all packed up, save the necessary things like a set of dishes, our bathroom needs, our clothes, and our daily electronics (TVs, computer, alarm clock, etc.)

Tomorrow is the deadline for our loan acceptance letter, and Jeff is freaking out about why our loan lady hasn't submitted anything to our real estate agent yet. Jeff talked with our agent and asked, "Well, what if you don't get it tomorrow?" to which our agent replied, "You'd lose your house. [chuckles]" Jeff didn't ask why he chose to chuckle at the end (is it a joke, or is he worried too?) , and now it's racking Jeff with guilt and Jeff was two seconds away from calling the loan lady at home all night, since he works with a woman who is best friends with our loan lady.

I am usually the impatient and overreactive one, but when Jeff starts to freak out, I wonder why the hell I'm not freaked out, and then that gets me freaked out. While Jeff is peacefully slumbering, I'm going through the worst case scenario in my head (losing the house, having to cancel everything, we don't have a house to live in as of August 1, having to rechange addresses with the post office, cancelling/postponing the fridge order, etc.) Could we sue the bank for damages? Hmmm...

On a happier note, I've found a wonderful website, www.icovia.com, that has really cool decorating planning. It's like CAD for dummies. :) I've got all the colors picked out, now I just need to figure out what is arranged where and I think I've got a plan!! We had sooooo better get this house now. We're 99.98% there.

My favorite cake mix

INGREDIENTS
1 cup and 3 tablespoons all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup white sugar
1/4 cup shortening
1 eggs
1/2 cup milk
1/2 teaspoon vanilla extract

DIRECTIONS
For a Yellow Cake: Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.
Pour batter into greased and floured 9x13 inch pan. Bake in preheated 350 degree F oven (175 degrees C) for 25 to 30 minutes.

Variation for a White Cake: Prepare as for the basic cake except use 3 egg whites for the 2 whole eggs. Whites may be beaten separately and added for a lighter cake.

Variation for a Chocolate Cake: Add 1/4 cup cocoa powder to the basic cake mix prior to adding the milk.

Variation for a Spice Cake: Add 1 teaspoon cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground allspice to the basic cake mix.

Variation for a Pineapple Upside Down Cake: Melt 1/2 cup butter in the bottom of a 9x13 pan. Add 2/3 cup brown sugar, stirring into the butter. Arrange pineapple slices in the pan. Top with the basic (yellow cake) mix recipe. Bake 30 to 35 minutes, cool 5 minutes, and invert to serve.
